We accept pre orders with two days advance notice and prepayment. You may place an order in the cafe or over the phone by calling 913-669-9883. Phone orders will be confirmed once availability has been determined, payment accepted, and you receive a confirmation call from the Ibis staff.

About us

The company’s namesake is a stately bird that only eats among other ibises. Just as the ibis gathers together to feed, good bread brings people together and is best when shared in community.

Crusty Bread

Our bread is baked over a 30-hour period. During this time, gluten is fermented and broken down by the yeast to make it digestible. We use no oils or added gluten – only freshly-milled organic flour, our wild yeast starter, water and sea salt. Other ingredients like nuts, seeds, fruit and herbs in the bread are almost exclusively organic.

Enjoy this French-inspired bread with friends, family or strangers. Store on the counter about 2-3 days in the paper bag we provide, or pick up a reusable beeswax-lined linen ($16) to wrap it, and enjoy fresh bread for up to 6 or 7 days. Do not refrigerate.

Brioche

A light and buttery bread baked in a pan. The brioche comes regular most days, and we make a subtle citrus brioche on Saturdays. Perfect for French toast or bread pudding. This bread does contain some commercial yeast in addition to our wild yeast starter, but, just like our crusty breads, it also goes through the sourdough process.

Pastry

Just like everything else, we use organic and local ingredients whenever possible for our pastries. They change with the seasons, and every part of them is house-made. If you have a gluten-intolerance or allergy, please take note that some of our pastries are totally wheat-free, some are fermented and some do not go through the sourdough process at all.
